Course Synopsis

This course provides knowledge in major food ingredients such as water, carbohydrates, lipids, proteins and flavors with other constituent of foods. This includes different categories of food ingredients such as flour, gums, spices, starch, vitamins and other food additives. The course also emphasizes on technical information in the area of ingredient interactions pertaining to foods in order to optimize ingredient performance
