This course covers the improvement and development of cereal products and processes which provides an understanding of the impact of processing and storage conditions on the physical properties and structure of pre- and postprocessed materials. It also focusses on the techniques of several cereal processing technologies, including baking, pasta extrusion, and hightemperature extrusion, as well as cookie and cracker production.
